Avocado Pesto Pasta

Ingredients:

Pasta(any)- 1 cup
Avocado - 1
Cheese - 1/4 cup
Pine Nuts (toasted)-  1/2 cup
Dried Basil - 2 tbsp
Lemon juice - 1 lemon
Salt and pepper to taste.
Milk- 1 cup

Vegetables (mixed vegetable for pasta)

Preparation:

Boil pasta, drain and keep aside
Saute the vegetables till they are tender. Add salt and pepper and keep aside

Avocado Sauce:

Grind pine nuts in a grinder.Add Avocado,  salt, basil , cheese and lemon juice to form paste.
To the paste, add milk till the consistency of sauce is obtained. keep aside

Before serving, heat a pan and add vegetables, sauce and pasta it. let it cook for some time

Serve hot.

Mushroom Risotto



Ingredients

Big button Mushrooms (sliced)- 4
rice (parboiled) - 2 cups
Vegetable broth- 1 cup
Onion(chopped fine) - 1 cup
Tomato puree - 1 cup
Cheese slices- 4
Thyme- 2 tsp
Parsley - 2 tbsp
Permanent cheese to Garnish 
Salt and pepper
Oil - 2 tbsp

Preparation

Heat 1 tbsp oil in a pan
Add mushroom,tomato puree ,thyme, salt and pepper
Stir till done


Remove from pan and keep aside
Heat remaining oil in the pan
Add onion and stir till it is golden brown
Add rice and cook for 5 minutes
Add vegitable broth and stir till it evaporates

Stir till the rice is sticky and done
Add mushroom and parsley and cheese slices 
Fold in slowly 




Garnish with parsley and permanent cheese and serve

MineStrone Soup

Ingredients:

Oil- 1 tbsp
Onion (sliced)- 1
Tomato (peeled and diced)- 3
Carrot (cut thin and long)- 1
Radish (cut thin and long)- 3 small
Spinach (chopped fine) - 1/4 cup
Coriander (chopped fine)- 1/4 cup
pasta - 1/4 cup
Garlic(crushed)- 1 tsp
Water or stock
salt and pepper

Preparation:

Heat oil in a pan
add garlic, onion and coriander
Stir for 10 minutes in low flame so that the onion does not change color
Add  carrots, radish spinach and water (or stock)
Add salt and pepper

Cover and simmer in low flame for 15 minutes
Add tomatoes and pasta


cook uncovered for 10 minutes till all vegetables and pasta is done

Serve with cheese or bread

French Onion Soup

Ingredients


Onion - 1
Oil- 1 tbsp
Tomato pasta sauce - 1 cup
Corn flour - 1 tbsp
Salt to taste
Boiling water - 2 cups
French Bread (cut in round pieces)/ Bread sticks -  10
Cheese (optional)

Preparation

Fry onion in a pan until they caramelize
Add corn flour to onion and stir
Mix tomato sauce, salt and boiling water in a separate bowl
Add the sauce mixture to the onion and corn flour

Cook for 10 minutes
Preheat broiler
In a baking dish arrange the bread pieces

Pour the soup over bread

Cook in broiler for 10 minutes or until the bread is crisp


Add cheese to garnish if needed

Cream Spinach soup

Ingredients:
Oil- 4 tsp
Onion(finely chopped)- 1 small
Milk- 2 cups
Corn flour- 4 tsp
Spinach (finely chopped)- 2 cups
Water- 1 cup
salt and pepper - to taste
Mace - 1/4 tsp

Preparation
Heat oil in a pan
Add onion and fry till done
Add corn flour and slowly mix milk stirring continuously

Stir till you get a thick solution

Add 1/2 cup water and stir
Add salt . pepper and mace
Add spinach and rest of water

Stir for 10 minutes.

Serve with bread and Salad.

Coleslaw

Ingredients:
Cabbage (thinly sliced)- 1 cup

Onion(thinly sliced)- 1/2
Carrot (shredded)- 1/2
Sugar- 2 tsp
salt to taste
Raisin - 10
Sour creme - 1 tsp
apple(thinly sliced)- 1/2

Cantaloupe(cubed) - 1/2 cup
lime/lemon juice - 1tbsp
Coriander leaves (chopped)- 1/4 cup

Preparation :
mix all ingredients

Beans Casserol

Ingredients:
Onion (Chopped) - 1
Jalepino- 2
tomato (chopped) - 1/2
Cinnamon stick - 1/ in
Cloves - 2
Beans - 1 + 1/2 cup
Corn - 1 cup
Cheese slices - 2
Bread crumbs - 1/2 cup
oil - 2 tsp

Preparation
Preheat the oven at 360 deg and grease a small baking dish
Heat oil in a pan
add cinnamon and clove to it
Add onion and jalepino and fry for some time
add tomato and fry for some time

add corn to pan
Add Beans and fry till tender


Take greased baking dish and spread empty the vegetables from pan in it
place cheese spread over it
Sprinkle bread crumbs on top
bake for 15 minutes till it starts bubbling
stop the oven and let it settle for 5 minutes

Serve with bread, sauce and salad

Tomato Sauce

Ingredients:
Carrot (finely chopped)- 1 medium
Onion (finely chopped)- 1
oil - 1 tsp
Garlic (minced) - 3
Bay leave(powdered) - 2
Cinnamon powder- 1/4 tsp
Tomato - 3
Sugar - 2 tsp
Corn flour - 2 tsp
cream - 1 tsp
salt to taste
Red chilli
pepper

Preparation
 Boil tomatoes till they start peeling off
When the tomato starts peeling off, remove from flame and let it cool for some time

remove the peels from tomatoes and mash it

Heat oil in a pan and add carrots,garlic, bay leaves,cinnamon powder and onion to it. cook (stirring occasionally) till it it tender

Add salt,pepper, chilli powder  and tomato to the pan
add some water and cook (stirring occasionally) till the vegetables are tender
Add some more water and corn flour. stir while adding corn flour,
Add creme to pan (stirring gently)
Add sugar and cook for 5 - 19 minutes.

Serve with Pasta or casserole

Potato Casserole



Ingredients:
Potatoes (cut in rounds)- 3
Onion (sliced)- 1
Tomato- 1
Cheese slices - 3
Cabbage (cut)- 1/2 cup
salt to taste
red chilli powder
pepper
oil for greasing
foil

Preparation:

Preheat oven at 450 deg
take a oven safe pan and grease it
Arrange a layer of potato in the bowl. Leave some for later.
Spread onion over potatoes.use only half of the onions

Spread tomato over it

add salt pepper and chilli over the layers
Spread cheese over it
Spread cabbage over it
Spread the remaining potato and onion
sprinkle salt, pepper and chilli
cover the pan with foil

put it in oven for baking for 30 minutes

Add some Sauce while serving
Can be served with bread and steamed vegetables

Stuffed Pasta Shell

Ingredient:

Jumbo Pasta Shells - 10
Water to boil
Tomato Pasta Sauce

For stuffing
Corn - 1/2 cup
Egg White (Whisked)-I egg
Mozerella Cheese - 3 tbsp
salt to taste
Milk- 2 tsp
Chopped Spinach - 1/2 cup

Preparation:

Preheat oven at 350 degree
Boil water in a pan and add 1/2 tsp of salt pasta shells in it .Boil til it is done.Do not overcook


While the pasta is boiling, mix all the stuffing ingredient


Take a baking dish.Spread 1/2 cup of pasta sauce in it


When the pasta is boiled , drain the water and let the pasta cool down for a few minute

Fill the shells with the stuffing


Repeat for the other shells and place on the Baking sheet over the pasta sauce


Spread the remaining pasta sauce over the stuffed shells

Cover the Baking dish with Aluminium foil and bake for 15 minutes


Remove foil from the baking dish and bake the dish again for 15 minutes


Remove from oven after 15 minutes.Serve hot
